ZAZA'S WELCOME

The idea for Zaza’s Pastas was born on the back of a wooden spoon when I was just a kid growing up on Long Island in the 1980s.  You see, my grandparents were my next door neighbors which meant I could run across the back yards and into my Nonna’s kitchen in about 30 seconds; even faster if she was making ravioli.   There was always something delicious bubbling on the stove at eleven in the morning that was meant for dinner that night.  My Nonna didn’t take short cuts.  She grew and harvested most of the vegetables in her garden and checked the laying baskets in the chicken coop for eggs every morning.  There were no immersion blenders, box mixes or jars of sauce.  It was only fresh, whole ingredients being transformed into some of the tastiest food I can remember.  They say smells and tastes are the memories that stick with you the longest and, to this day, whenever I walk into my grandmother’s kitchen I am instantly transformed into an eight year old girl again.

Being so close to my grandparents afforded me the opportunity to learn countless lessons about working hard, family values, patience and, most importantly, the essence of the Italian kitchen.  It wasn’t just about the ingredients, although, don’t get me wrong, that was a big part of it.  It was about honoring the recipe.  It was about the people you were feeding.  It was about treasuring the time spent around the table with loved ones.  At Zaza’s Pastas, it still is about all of those things.  Every time I make a batch of pasta, I feel very connected to that upbringing and that time in my life.  

Our pastas start with high quality ingredients.  We use only non-GMO semolina flour, all purpose flour from organically-grown Iowa wheat, water and sea salt.  To make things interesting and flavors exciting, we source even more local, organic ingredients like vegetables, herbs and garlic to create an innovative twist on classic shapes like Fettuccine and Pappardelle.  Our unique blend of flours yields a pasta that cooks up and tastes very similar to fresh pasta, though it is both dry and shelf-stable.  Once the dough is formed, it is extruded through bronze dies, an age-old method of making superior pasta.  This process creates a noodle with a rustic texture perfect for holding onto sauces.  Being both a mom and a small business owner, I find that the best thing about our pastas is how quickly they cook.  Three to four minutes is all it takes to cook up your favorite Zaza’s Pasta which means more time spent around the table with the ones you love.
